With Chris hailing from the north east of Scotland, scotch ales are near and dear to our hearts and just because we're an Estonian brewery isn't going to stop us making one!

Recovering Perfectionist is our wee heavy, a style we've reinterpreted for the modern beer world. It's not a caricature of "traditional" Scottish brewing, but rather our answer to what should this style look like today - the best ingredients we could find, traditional techniques, and a modern attitude. As much a beer as a statement of intent, this represents our desire to have fun whilst respecting our own passions.

Here we're using just three malts - Scotland's own barley (Golden Promise), heirloom black oats from a tiny farm and a tinier maltster (Pehkolan) in Finland, and a touch of old world amber malt.

When paired in our mash tun these give the most effortlessly rich and smooth biscuity malt body this side of the Atlantic, that we've loaded up with marmaladey East Kent Goldings hops during the boil and fermented with a classic British ale yeast.

In trying to deliver the deliciously chewy toffee and caramel malt flavours demanded from a wee heavy, we've boiled down our first runnings into the kettle, and then boiled the whole batch for hours and hours until thick and complex.

Fermentation? Cold and slow, and conditioned at subzero temperatures for far longer than is sensible.

Hops? Everyone knows the Scottish are cheap and don't use many, right? Wrong, this is extravagantly hopped, and all the better for it.

An excellent beer to put away and enjoy in the colder months now or next year, Recovering Perfectionist will transport you through the bens and glens and right back to your glass.

This is a smaller batch than usual so stocks are limited... but no-one buys Scotch ales anyway so no rush!
